Is a Living Trust the only way to list a minor as a beneficiary on a Life Insurance policy? If not, how else can it be done?

No, certainly a living trust is not the only way. Far more commonly, someone simply has a testamentary trust as part of their will, then designates on the insurance policy that it will go to the minors trust as specified in the will.
